Is it possible to transfer music/videos/cover art from the iPod to my computer?

Yes, it is. Mark all tracks you want to copy to your computer by activating the checkbox next to the track title. Then press F2 or use "Actions->Copy Selected Files to Hard Disk". This copies all the tracks, including any cover art. You can configure cover art handling in "File->Options->Cover".
